Arugula Chicken Pasta Salad

I'm a big fan of meal prepping. I feel like it makes my week SO much less stressful when I have meals pre-prepped. I love pasta salad and I like experimenting with different recipes. This is one I came up with a while ago and it's been one of my favorites ever since. AND it’s pretty healthy too!


I always love the combo of arugula and pasta and by adding a ton of greens, it makes it more like a traditional “green salad” and helps you get in some extra veggies for the day. It's super easy to make and seriously tastes amazing. Both good things, right?!



Arugula Chicken Pasta Salad 


Ingredients

  • 1 box (8 oz.) pasta (I love using Banza or whole wheat pasta)

  • 4-5 cups fresh arugula

  • 12 large spears asparagus

  • 10 oz. chicken, grilled

  • 1 cup roasted red tomatoes

  • 3 oz. goat cheese

  • 1 Tbsp. olive oil

  • 1 Tbsp. red wine vinegar

  • 1/2 tsp. ground mustard

  • Salt to taste (optional)


Directions

  1. Cook pasta per box directions

  2. Chop asparagus into bite sized pieces and add to the pasta for the last 2-3 minutes of cooking

  3. Cook pasta and asparagus until tender

  4. Grill chicken until cooked through and chop into bite-sized pieces

  5. Mix together olive oil, red wine vinegar, ground mustard (and salt, if desired) until combined to make a "dressing"

  6. Place arugula into a large bowl

  7. Add grilled chicken, cooked pasta and asparagus, cheese and roasted red tomatoes to arugula

  8. Drizzle olive oil dressing over salad and mix to combine

  9. Enjoy!

*You can eat this immediately but I like to put it in the fridge for a few hours to let the flavors
