I am a creature of habit. I tend to eat the same meals over and over. I like what I like and I'm okay with that. However, every once in a while I decide to be a little daring and try something new (I know, living on the edge right?). Anyway, I saw these Avocado Cucumber Tartines and they looked super easy to make and tasty. And...they WERE, on both accounts. I had to share the recipe.

Avocado Cucumber Tartine


  • 4 slices whole-wheat bread

  • 1 cup cucumber, with seeds removed, minced

  • 2.5 Tbsp. rice vinegar

  • 2 teaspoons toasted sesame oil

  • Dash salt and pepper

  • 2-3 avocados, halved

  • 2.5 Tbsp. sesame seeds


  1. Toast the bread

  2. While bread is toasting, combine the cucumbers, rice vinegar, sesame oil, and salt in a small bowl - allow to sit for at least 5 minutes

  3. Mash the avocado in a separate bowl and season with salt and pepper

  4. Once the bread is toasted, spread the mashed avocado onto it.

  5. Top with the cucumber mixture and sprinkle with sesame seeds Recipe credit:
