I am a creature of habit. I tend to eat the same meals over and over. I like what I like and I'm okay with that. However, every once in a while I decide to be a little daring and try something new (I know, living on the edge right?). Anyway, I saw these Avocado Cucumber Tartines and they looked super easy to make and tasty. And...they WERE, on both accounts. I had to share the recipe.
Avocado Cucumber Tartine
Ingredients
4 slices whole-wheat bread
1 cup cucumber, with seeds removed, minced
2.5 Tbsp. rice vinegar
2 teaspoons toasted sesame oil
Dash salt and pepper
2-3 avocados, halved
2.5 Tbsp. sesame seeds
Directions
Toast the bread
While bread is toasting, combine the cucumbers, rice vinegar, sesame oil, and salt in a small bowl - allow to sit for at least 5 minutes
Mash the avocado in a separate bowl and season with salt and pepper
Once the bread is toasted, spread the mashed avocado onto it.
