Healthified Zucchini Bread

Do you love Zucchini Bread as much as I do? I freaking LOVE Zucchini Bread. Plus...veggies #amiright


The best combo...eating sweets AND veggies at the same time! So when Russell Stover sent me some of their Sugar Free Baking Chips to try I was so excited to bake them into Zucchini Bread and it was DELICIOUS. So try this out...you'll love it. Promise.



HEALTHIFIED ZUCCHINI BREAD


Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp. baking powder

  • 1/4 tsp. salt

  • 1/2 tsp. baking soda

  • 2 tsp. cinnamon

  • 1/2 tsp. fresh ground nutmeg

  • 1 egg

  • 1/2 cup vegetable oil

  • 1/4-1/2 cup skim milk

  • 1 cup sugar OR sweetener

  • 2 tsp. vanilla extract

  • 1 cup zucchini, shredded

  • 1 cup Russell Stover sugar-free milk chocolate chips


Directions

  1. Preheat oven to 350 degrees F

  2. Mix oil, egg, vanilla, milk and sugar together

  3. Add four, baking powder, salt, baking soda, cinnamon and nutmeg and mix until just combined

  4. Add in zucchini and chocolate chips and stir

  5. Pour batter into a large, oiled loaf pan and bake in the oven for 50-60 minutes or until a toothpick comes out clean

  6. Let cool and enjoy!
