Healthy Oatmeal Breakfast Cookies

As you know breakfast can be tricky for me though, because I go to work so early and I don’t have time to eat before I leave. That's why I love having on-the-go breakfast options. One of my favorite foods ever is oatmeal...in basically any form but ESPECIALLY in cookies. That's why I love these healthy oatmeal breakfast cookies. They're great for breakfast, or a snack! Like guys, they're really so good!


You know what’s also delicious? breaking them up into my yogurt and eating them as kind of a “cookie granola”. That's a thing...for sure.


Healthy Oatmeal Breakfast Cookies

Ingredients


  • 2 medium ripe bananas

  • 1 cup oats

  • 1/4 cup whole wheat flour

  • 1/4 cup ground flax-seed

  • 1/2 tsp. baking soda

  • 1/2 tsp. baking powder

  • 1/2 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • Optional add-ins: Dark chocolate chips, nuts, craisins, etc.


Directions


  1. Pre-heat oven to 350 degrees

  2. Mix all ingredients together (except add ins), it may seem slightly more wet than regular cookie dough - you can add a few more oats if needed but you’re going to stick the dough in the fridge so it will thicken a bit.

  3. Place dough in the fridge for 20-30 minutes to let it thicken up a bit (it will still be pretty soft)

  4. Scoop dough into 1-2 inch balls on a non-stick cookie sheet (you may want to pat them down with a spoon a bit if you want your cookies more flat and less round)

  5. Add your dried fruit, chocolate chips (other desired toppings) to the top of your cookies

  6. Bake for 10-13 minutes until they are slightly starting to brown

  7. Let cool and enjoy!
