Peppermint Chocolate Cookies

Do you love the holidays? What's your favorite part? One of mine is definitely BAKING. I LOVE making holiday treats and cookies are my favorite. I love experimenting with new recipes and seeing what I can come up with so when Russell Stover sent me a bunch of their chocolates I knew I had to incorporate some of them into my holiday baking. I tried the White Chocolate Peppermints and I was sold...I had to find a way to add them into my baking. All their chocolates are a perfect add in to you baking recipes. Trust me.


I love sweets and treats but my favorites are COOKIES! Anyone else?? So I decided to experiment with some chocolate peppermint cookies and added crushed up Russell Stover white chocolate peppermints into the frosting. SO. DANG. GOOD. Like...maybe my new favorite cookie. No joke.


You definitely need to add these into your holiday baking rotation this year.


PEPPERMINT CHOCOLATE COOKIES

Ingredients:

COOKIES

1 cup butter, softened

1 1/4 cup sugar

1/2 cup brown sugar

2 eggs

1 tsp vanilla

2 1/4 cup flour

½ tsp baking soda

½ tsp baking powder

1/2 cup unsweetened cocoa powder

1/2 tsp salt

1/2 cup milk chocolate chips

PEPPERMINT FROSTING

3/4 cup butter, softened

3-4 cup powdered sugar

1 tsp peppermint extract

1 tsp vanilla extract

2 Tbsp heavy whipping cream

1 drop red food coloring

Dash of salt

8 russell stover peppermint candies, crushed


Directions:

  1. Preheat the oven to 350 degrees.

  2. In your mixer, beat the butter, sugar, brown sugar, eggs and vanilla until well combined.

  3. Add in the flour, baking soda, baking powder, cocoa powder and salt and mix in.

  4. Fold in (or gently mix) the chocolate chips in.

  5. Scoop and roll dough into 4 oz. balls and place on ungreased cookie sheet.

  6. Place in the oven and cook for 12-16 minutes.

  7. While the cookies are baking make frosting.

  8. Beat the butter, vanilla and whipping cream together until creamy.

  9. Add red food coloring, dash and salt and slowly mix the the powdered sugar until you reach desired consistency.

  10. Add peppermint pieces and mix in.

  11. Take the cookies out and let them cool.

  12. Frost each cookie and sprinkle with white chocolate peppermint pieces.

  13. Enjoy or store in the fridge in an airtight container.
